This soup is a real treat, you will want more! It remains a very simple dish, requiring few ingredients and little preparation time. It consists of salmon, the most common fish in Finland, and root vegetables such as potatoes and carrots. Personally, I prefer to make this soup with water, but for the more indulgent, you can make it with cream!

Steps to prepare lohikeitto


Step 1: Chop the onion

Peel and finely chop the yellow onion.

Step 2: Peel and chop the vegetables

Start by peeling your potatoes and carrots. Then cut them into cubes or strips, as you wish. The most important thing is to have pieces of vegetables that are roughly the same size so that they cook the same way.

Step 3: Cook the vegetables

Add your chopped vegetables to your pot and cover them with water.

Cook the vegetables in a pot, adding salt and pepper. You can also add vegetable broth if you have it.

Step 4: Prepare the salmon

Prepare your salmon steaks by removing the skin and bones. Rinse your fish and cut it into cubes. Then, as soon as the vegetables are almost cooked, add the salmon and the chili.

Regarding the cooking of the vegetables, if you stick a knife into the potatoes, it should be able to go in without much resistance.

Step 5: Add the milk

Let your salmon cook with your vegetables for 5 minutes, then add the milk (or cream for those who prefer). Bring to a boil.

Step 6: Serve

Just before serving, add some chopped dill! Enjoy your meal!
