Preheat your oven to 200°C
Mix the sifted flour, sugar, baking powder, vanilla sugar and salt in a bowl.
Melt the butter in the microwave or in a double boiler.
Make a well and crack the eggs into it. Add the melted butter, then the milk a little at a time. When you add the milk, keep beating the batter to prevent lumps from forming.
Mix vigorously until you have a smooth batter. If you have any lumps, use an immersion blender to remove them.
For this step, you have several choices for baking your pannukakku:
Bake for 30 minutes at 200°C, or until golden brown on top.
Once cooked, remove the pannukakku from the oven and let it rest for a few minutes before cutting it into portions.
Serve the pannukakku warm, sprinkled with powdered sugar, jam, honey or fresh fruit, according to your taste.
